Moisten the round of meat with extra virgin olive oil and season by “massaging” it with coarse salt and pepper.

In a saucepan, sauté the meat in extra virgin olive oil, being careful to fully turn the round.

Simmer the round in a court bouillon seasoned with bay leaf, cloves, and garlic for approximately one hour (depending on the size) over very low heat.

When done cooking cool in ice water.
